A Shohin size olive
This olive tree is not be higher than 30cm when measured from rim of the pot, to the top of the tree.
It has a nice natural aging dead wood at front.
I will probably remove all young branches and start from scratch

A Shohin size olive
It looks like all the branches come from that rather stunning central core. I would prune back leaving 10mm stubs for adventitious shoots[You must be registered and logged in to see this image.]

thats right all the branches come from the central core. I would do the pruning as you recommend.
Iam just thinking to leave two branches as shown on red on the attched sketch. The blue line shows proposed secondary branching and foliage line.

Re: A Shohin size olive
You could have cut harder, I say....
But perhaps you should have restrained yourself to do this next fall, or you should not?

I cannot manage photo editing at all, but what I would like to do with this tree would be something like the following photo keeping the deadwood branch a little shorter.
I would like to start the olive from the very begining if it were mine...

I hope you can make out my intention despite the bad virtual

Thanks for the virtual! I understand your point. I will think about it.
Re: A Shohin size olive
I would not touch the deadwood as in this case it should be the main point of interest on this tree. My idea behind the styling of this tree would be to style it in such a way where the deadwood would be the focus point and the rest of the tree's features should try and "frame" the focus point.
This piece of deadwood makes this tree unique, different from others.
(my humble opinion)
